Job Summary

The Senior Cost Controller is responsible for monitoring, analyzing, and controlling the hotel’s food, beverage, operational, and other departmental costs to ensure efficient financial performance. The position works closely with the Finance, Food & Beverage, Purchasing, Stores, Kitchen, and Operations teams to maintain accurate cost records, identify variances, and implement effective cost-control measures.

Key Responsibilities

• · Monitor and control food, beverage, and operational costs to ensure they remain within approved budgets and targets.

• · Conduct daily and monthly cost analysis and variance reporting for Food & Beverage and other operational departments.

• · Review food and beverage consumption, wastage, spoilage, transfers, and complimentary items.

• · Conduct regular and month-end physical inventory counts and reconcile results with accounting records.

• · Investigate discrepancies between physical stock and system balances and recommend corrective actions.

• · Calculate and monitor food and beverage cost percentages, gross profit margins, and departmental profitability.
  

Job Requirements

Qualifications & Skills

• Bachelor’s degree or diploma in Accounting, Finance, Hospitality Management, or a related field.

• Minimum 3 year and above of experience in hotel industry.

• Previous experience in a Senior Cost Controller or similar supervisory role is preferred.

• Strong knowledge of hotel accounting, inventory control, food and beverage costing, and purchasing procedures.

• Experience with hotel property-management, inventory, and accounting systems.

• Languages: Proficiency in English is required
